Homemade Crackers!

I've been hunting for a good homemade cracker recipe to try for a long time. After reading about the recipe Angela created to taste like Wheat Thins, I was excited. We love Wheat Thins! I baked some this morning, and the kiddos approve!

*If you try these, roll the dough as thin as possible. The thinner the cracker, the more it seems to taste like the original- flavor and texture.



Homemade Wheat Thins

3/4 cup all purpose flour
3/4 cup whole wheat flour
1/2 cup wheat germ
1/4 cup sugar
3/4 plus 1/4 teaspoon salt, divided
2 teaspoons baking powder
1/4 cup vegetable oil
1/2 cup water

Combine the first 6 ingredients (saving 1/4 tsp salt). In a separate bowl, combine the oil and water. Make a well in the center of the flour mixture and pour in the oil mixture. Lightly mix until a dough forms. Divide into two balls, wrap each ball in plastic wrap and chill for an hour.

On wax paper, roll one ball as thin as possible (1/8 " or thinner). Cut with cracker cutters, a pizza cutter, or a knife. Poke holes with a toothpick or fork. Sprinkle with the reserved salt. Bake on a silicone baking sheet or parchment paper-lined baking sheet at 375 degrees for about 10 minutes*. Cool completely. Bake again at 375 for 5-7 minutes or until crackers are crisp. Cool and enjoy!

*The thinner the crackers, the quicker they burn. Watch closely.
